Gourmet Gurnard & Mussel Meat with Boulogne-sur-Mer Yellow Sauce

Seafood doesn’t have to be complicated to feel special. This elegant dish combines tender Sea Treasure Gurnard fillets with plump mussel meat, all bathed in a rich, herb-infused Boulogne-sur-Mer yellow sauce. Perfect for a summer Christmas dinner, weekend treat, or anytime you want to impress at the table.

Ingredients (serves 2–3)
2–3 Sea Treasure Gurnard fillets
150–200g Sea Treasure mussel meat, thawed.
1 tbsp olive oil
Salt & pepper, to taste
1/2 cup butter
1 small shallot, finely chopped
1 tbsp Dijon mustard
1/2 cup white wine or fish stock
1/2 cup cream
Fresh herbs: parsley, tarragon, chives
Lemon wedges, to serve
Method
1️⃣ Prepare the fish: Lightly season gurnard fillets with salt and pepper. Preheat oven to 180°C / 350°F.
2️⃣ Sear the gurnard: Heat olive oil in an ovenproof pan and sear fillets for 1–2 minutes on each side until lightly golden.
3️⃣ Bake: Transfer to the oven and bake 8–10 minutes until cooked through and flakes easily.
4️⃣ Prepare the sauce: In a small saucepan, melt butter and sauté shallots until translucent. Stir in Dijon mustard, white wine (or stock), and cream. Simmer gently for 3–5 minutes until slightly thickened.
5️⃣ Add mussels: Stir in mussel meat and warm through for 1–2 minutes. Add chopped fresh herbs and a squeeze of lemon juice. Season to taste.
6️⃣ Serve: Plate the gurnard fillets and spoon over the mussel-infused yellow sauce. Garnish with extra herbs and serve alongside roasted potatoes, seasonal greens, or a crisp salad.
